New Refrigerator

The new refrigerator has arrived. It fits perfectly in the space. It has a little bit more room inside than the old refrigerator. We finally can move the "college" refrigerator back to the garage and fill it with water and soft drinks again.

Excerpt for Today: Compassion

"According to the ancient sages, our great obligation as human beings is to understand ourselves and the people around us, whether they are friend or foe. The religious term for this kind of understanding is compassion, which literally means to bear with someone. Whether we engage in conflict with someone or make a home with them, whether we are designing a program to ease human suffering or passing a law to restrain human conduct, we need to bear with the people involved long enough and attentively enough to discover who they are, what they want, what they hope for and what they fear.

After saying that the great commandment is to love God, Jesus noted that the second commandment, which he said was equally important, is to love your neighbor as you love yourself. He also said, not coincidently, that we are to love our enemies. Lao-Tzu put it this way: “Patient with both friends and enemies […and] compassionate toward yourself, you reconcile all beings in the world.” Simply stated, the great obligation requires that we engage with other people not as objects to be overcome, but rather as human beings who have their own beliefs, and hopes, and fears, and ambitions. Without understanding them in this way, nothing is possible—not victory, not a spirit of camaraderie, not a sense of community."

One more day....

Only one more day until the new refrigerator is delivered. We have been using the "college" refrigerator for almost a week now. We will be so happy to have the new one here. We did try to fix the old refrigerator and it seemed like it was going to be too expensive to try to get it fixed. ($50 for each service call).. We had a repair person come once and after they "fixed" it, it just ran all the time. We also noticed an increase of about $20 in our electric bill. So it was time to replace it.

The old refrigerator is cabinet depth with wooden panels that match the cabinets-which made it difficult to replace. Because it is over ten years old, we couldn't find a refrigerator with the same size panel inserts. So we had two options - buy a panel ready refrigerator and try to find someone to make us new panels or buy a refrigerator that doesn't take panels. We decided to go with a stainless steel one-GE Profile similar to the one we had in Houston. Although the other appliances are white-they do have the stainless trim-so I think it will look OK.

Banana Oatmeal Bread

Today I am making this banana bread. I have used this recipe for a long time. Sometimes I add walnuts or pecans and a little cloves.

Banana Oatmeal Bread

Cream together:
½ cup shortening (butter-flavored Crisco)
1 cup sugar

Add and beat until fluffy:
2 eggs
1 teaspoon vanilla

Combine:
1 cup flour
1 cup quick oatmeal
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon

Add to creamed mixture alternating with:
3 medium bananas
¼ cup milk

Pour in 9 x 5 greased loaf pan.

Bake at 350 degrees for 50-60 minutes

Quiet Day

It is almost 10:00 at night and cable and internet service has finally been restored. It went out this morning about 9 to most of the Five Cities area because of a construction accident. Although we didn't really need it-we are glad it is back!!

The butterflies are coming back. The monarch butterflies winter in an area not far from here near the ocean. I have seen quite a few in the neighborhood and at the high school. I haven't been able to capture one at film, yet!! Hopefully I will post one soon!!

GAS!!

Today I filled up the van with gas at $2.49 for a gallon! Last week the price went from $2.29 to $2.43 and then yesterday went up to $2.49.
